For the purpose of the expansion of green tea consumption, a new method to produce the juice expresion powder of tea leaves was developed.<BR>Fresh tea leaves were steamed, cut finely with a food processer, and expressed using a common juice mill at constant pressure (170kgf/cm<SUP>2</SUP>) for 30 minutes. The tea juice expression contained 5.8-8.7% solids and its amount was about 40% of that of the steamed tea leaves. After addition of a bass powdering material, the tea juice was freeze-dried to give a new type of juice expression powder.
