In recent years, the sake market is very competitive, and it has been separated into two parts. One is the upper part with the oligopoly by a few large-scale firms, and another is the lower competitive part with many small and medium-scale firms. A large number of local industries which developed with the resource, the history, the culture, and people's life in the local area, such as Sake industry, have been screened out in market competition and disappeared.The production amount of Sake and also the number of Sake brewing company in Hiroshima prefecture have been declining. It causes the reduction of the share in national market. Today, they have to rely more heavily on local consumption. But, the local Sake consuming market itself has also become small. Moreover, the big stream of national brand Sake with low price and high added value Sake from other local area, such as Niigata prefecture, has been rushed on the local market. Small Sake companies in Hiroshima have faced with many difficulties even in their own local market.Compared with many other local industries, Sake industry still has a strong relation with local resources and technology. For the development of local economy, the promotion of Sake industry alone is not enough. We need to consider the related industries, such as agriculture for material supply, commerce for consuming market and research and development on technology also.
