1. As quaternary ammonium bases in octopus pedal muscle extract, glycine betaine (905～1227mg/100g), TMA (trace～0.7mg/100g), TMAO (52～149mg/100g), homarine (119～196mg/100g) and trigonelline (6～15mg/100g)were confirmed and determined. Trigonelline was discovered firstly in octopus extract. 2. As nucleic acid relating compounds in the same extract, ADP (6～24mg/100g), AMP (38～138mg/100g), inosine (36～52mg/100g), hypoxanthine (9～15mg/100g) and adenine (7mg/100g) were found and determined. For the extraction of nucleic acid relating substances from octopus muscle, perchloric acid was more effective extractant than boiling water.
