1) Investigation was carried out to determine the yeast and the culture media which are suitable for lipid metabolism. 2) From 10 strains of yeast, Torula utilis and Rhodotorula gracilis were selected. 3) In the lipid of T. utilis, iodine number was 114 in negative acceleration, 124 in decline phase. In composition of the fatty acids, the decrease of C_<16> palmitic was remakably seen. C_<18> dienoic was increased. Unsaturated fatty acids may be formed later than saturated fatty acids in this yeast. The major component fatty acids in Rh. gracilis were C_<16> palmitic and C_<18> monoenoic. With elapsing of the culture time, C_<16> palmitic and C_<18> dienoic were increased and C_<18> stearic and C_<18> monoenoic were decreased.
