Determination of Capsaicinoids in Capsicum Fruits by Reversed-Phase High-Performance Liquid Chromatography and Gas-Liquid Chromatography

A method for the quantitative determination of capsaicinoids in Capsicum fruits was developed using high-performanse liquid chromatography (HPLC) and gas liquid chromatography (GC). Afterextraction with acetone, the pungent compounds were separated on acolumn of LiChorosorb RP-18 (5μm), eluted with 50% acetonitrile in 1% glacial aceticacid in water, and the column effluent was monitored by UV spectrophotometry at 254nm. Each of the capsaicinoids was identified by combined gas chromatograph-mass spectrometry. This technique was used effectively to analyze capsaicinoids in Capsicum fruits.
