Preheating effects of melt on nucleation and growth of oleic acid (cis-ω9-octadecenoic acid) polymorphs were studied. The nucleation rate of the metastable α-form was significantly influenced by the preheating temperature of the melt. Degree of supercooling (?T) and induction time (τ) for crystallization of the α-form increased with increasing preheating temperature of the melt from 20℃ to 80℃. However, there was no clear pre-heating effect on the most stable β-form. This may suggest that differences in the melt structure which have been previously reported by Iwahashi et al. [J. Phys. Chem. 95 (1991) 445] influence the nucleation rates of the α-form. On the contrary, the preheating effect on growth rate of the α-form was not appreciable. This could indicate a modification of the melt structure at the solid-liquid interface of oleic acid crystals.
