Several peptide hydrolases have been isolated in a partially purified form from green wheat leaves by a combination of gel chromatography and chromatography on DEAE-cellulose. These hydrolases all degrade haemoglobin and other substrates tested at an acid pH. Three of the enzymes have been identified as proteinases by measurement of the total N: a-amino N ratio of the degradation products. These three enzymes have a similar optimum assay pH of about 4.5 with haemoglobin as substrate, but differ markedly in their stability at high temperatures.
