At 25℃ the activity of pectinmethylesterase (PME) solution incubated in ethylene atmosphere (100 μl/liter) was lower than that of PME solution incubated in air. On the other hand, at 6℃ the activity of the ethylene-incubated PME was higher than that of the air-incubated solution. The effects of' both temperature and ethylene on PME-solution activity are reversible phenomena. Ethylene accelerated both softening and the decrease of PME activity in avocado fruit at 25℃. However at 6℃ softening was accelerated as PME activity was promoted by ethylene treatment. Ethylene had similar effects on PME activity in both purified enzyme solution and in vivo systems.
