The active principle in Saccharomyces cerevisiae which is powerful as an antioxidant is soluble in 70% alcohol and stable to 100℃. The concentrate of the active substance was obtained from the yeast by the following procedures : The yeast was extracted with 70% alcohol. The extract was adsorbed to active charcoal after the removal of impurities by acid clay. The active cake was eluted with ammonia-acetone, then precipitated with phosphotungstic acid. The addition to liver oil of 1% of this concentrate could practically keep vitamin A contained in liver oil stable.
