NAD- and NADP-linked polyol dehydrogenases were examined with crude cell-free extracts of 6 representative yeasts with different polyol productivities. The characteristic polyol productivities of the yeasts could not be explained by the composition of the enzymes. Our present observations demonstrated that a minor change of the intracellular pH of the yeasts affected polyol dehydrogenase activities of Candida polymorpha (C.diddensii)^* and consequently might control the polyol productivity. It was noted that an NADP-linked enzyme which catalyzed the reduction of D-fructose was detected only in Torulopsis mannitofaciens, an excellent mannitol producer.
