Purpose of analysis This study was intended to analyze quantitatively ethanol and the extract of a Japanese alcoholic becerage, called sake on the basis of an enthalpogram obrtained by adding water directly to sake in an adiabatic cell.Method 25 ml sake, at 20℃ as a test sample, was put into an adiabatic cell. On the other hand, 100ml water was also put into a metallic drum-shaped container with both ends covered tightly with thin alminum foils and then this container was placed in the same adiabatic cell. When the difference in temperature between the water and the sake becames zero while stirring the test sample by means of a magnetic stirrer, a rotaro blade disposed in the metallic container broke the aluminum foils, letting the water out to mingle the water and the sample.This reaction system showed an increase in temperature by Δt, due to the heat of the dilution with occurred at the time of mixing of the water the test sample. So this rise of temperature was recorded on a recorder automatically. By colating the amplitude of this enthalpotram with a curve of calibration obtained a reference material containing known amounts of extract and ethanol, etanol and the extract of the test sample were analysewd quantitatively.Experimental results 1 div. of enthanolpogram is known as equivalent to 0.125% ethanol. Thus, the extract was analyzewd quantitatively from the percentage of ethanol detected by referring to both the calibration curve of the average content of extract (6%) and Nibonshudo by : the Nihonshudo-Meter. The accuracy of extract DATA was ±0.2%.Then, by correcting the erroes on the calibration curves dur to the influences of this extract on ethanol was analyzed quantitatively with an accuracy, ±0.08%. The standard error in this case was known to be 0.025%.Conclusion According to this method, it is possible to analyze quantitatively the content of ethanol in sake and to measure the analyzed results in a few minutes by the automatic recording without distilling ethanol beforehand.
