In cereal starch production, wet milling process requires a long time steeping in SO_2 solution as a pretreatment. Especially in corn starch manufacture, as long as 40〜48 hours of steeping is necessary to soften corn grain and loosen the starch from the gluten matrix.In this paper steeping conditions were studied, and a porsibility of reduciton of steeping time was found by the addition of cellulase preparation produced by Tricoderma viride to the steeping solution containing SO_2. At the best codition, 15〜24 hours of steeping was found to be enough judged by the steep water analysis and by the evaluation of the products of wet milling process, starch, fiber and gluten.
