For the learning of the digestibility of threonine in rice, at first, a method of artificial digestion was investigated. The method of Hankes. L. V. et al. is one of the better methods of artificial difestion, but it is used mainly on a large scale and utilizes the pancreas water-extract as a digestive enzyme. The author has made his investigation on a scale about 1/20 of Hankes and the pancreas water-extract was substituted with pancreation-powder (Pharmacopoeia Japonica, three times powder), and before use, this pancreatin-powder was dialyzed for three days in running water. By this artificial digestion method, the digestibility of threonine in casein and rice-powder and then more essentially, the digestibility of casein and rice-protein (glutelin, globulin) were investigated. The results were as follows : (1) There was no difference on the digestibility of threonine between casein and rice-powder, but the digestibility of threonine in rice-glutelin and rice-globulin were togethor lower than in casein (F-test, ration of risk : 1%). (2) In casein, in rice-powder, and in rice-glutelin (main protein of rice), the digestibility of threonine was similarly far lower than phenylalanine and lysine (F-test, ratio of risk : 1%).
