The results obtained were as follows : 1) We isolated various moulds from Daitokuji-Natto manufactured of soy bean and wheat in the open air, and found two strains of Asp. oryzae as main moulds.2) We have found that two strains of Asp. oryzae and a strain of Asp. candidus isolated from Daitokuji-Natto produce the enzymes which powerfully decompose both of protein and starch as compared with other strains of Aspergilli used for brewing. Accordingly, it may be possible to utilize them for miso-brewing.
