As for the converted this boiling corn starch, the authors investigated the relation between the condition of preparation and the degree of starch degradation in manufacturing process, and the results obtained are summarized as follows : 1) Hydrochloric acid in a concentration of 0.1-N or 0.2-N is suitable, and it is not necessary to use 0.3-N solution.2) A convertion time more than 6 hr is unnecessary and the convertion temperature is a most remarkable factor in this starch preparation.3) These results confirm KERR's opinion (Paper Trade J., 30,115,(1942)) concerning the process of starch degradation in the acid convertion, i.e., 1-6 bond in amylopectin is unstable to acid than 1-4 bond in other starch fractions.
