Several sorts of wheat flour have been taken up as substrates, and each of them cultured with Asp. oryzae, on one side in raw state, on the another side in roasted state, under the aid of wet rice-hulls. Their extracts with NaCl solution were compared one by one, about the amino-state nitrogen by Sorensen's Formol titration.As the result, the raw material has benn inferior to the roasted one generally, but the difference relatively small.About the technique of these studies, confer the article "On the digestion of raw starch by Asp.oryzae." Vol.28,No. 6 of this Journal.These studies have been practised especially for the purpose of application.
