• A partially derepressed mutant of Kluyveromyces fragilis showing hyperproduction of inulinase was isolated by means of ethylmethanesulfonate mutation followed by a 2-deoxyglucose selection. This mutant is suitable for the fermentation of inulin and Jerusalem artichoke extracts containing large amount of inulin high polyfructosans type ("early" extracts).
