Constant Fed-Batch Ethanol Fermentation of Molasses

The influence of the following factors on the ethanol productivity of constant fed-batch alcoholic fermentation of molasses was studied : yeast cell concentration of the inoculum (9.5 to 122.3 g/l, dry matter), total reducing sugars concentration of the feeding mash (151.7 to 330.9 g/l), and mash feeding rate (0.36 to 2.04 l/h, corresponding to a filling-up time from 15 to 3h). The sugar feeding rate varied from about 50 to 600 g/h. For a given sugar concentratioin and for a given mash feeding rate the ethanol productivity attained a maximum value when the yeast cell mass of the inoculum was equal to or greater than a critial value. A Monod-type correlation was observed between the maximum ethanol productivity and the sugar feeding rate. When the sugar feeding rate was smaller than about 200 g/l, the maxumum ethanol productivity was practivally not affected by the mash concentration. When the sugar feeding rate was greater than about 200 g/l, the highest sugar concentrations led to relatively small ethanol productivities. Ethanol yields (average=76.2%) and dead cells permentage (average=2.1%) were practically not affected by the expermental conditions.
