Fungal Pellet Breakup as a Function of Shear in a Fermentor

A model is presented to describe the influence of shearing forces on the breakup of fungal pellets in fermentors. This model is based upon the assumption that the fluid shear in a fermentor is responsible for the abrasion of particles of about the same density as the suspending fluid. Experimental results with pellets of Penicillium chrysogenum show a good agreement with this model.
