Experience in the Use of Culture Fluorescence for Monitoring Fermentations

Fluorescence was studied for its utility in monitoring a yeast fermentation by investigating the relationship of NADH fluorescence to the organism metabolism in fed-batch Candida utilis fermentations. Since the metabolism is a function of substrate concentration, it is possible to use fluorescence measurements to determine when substrate additions are needed. This method of monitoring a fermentation has the advantage of being external, instantaneous, and sensitive. For these reasons it could be a potential means of fermentation control in the future.
