病院給食における食事調査法の一考察

The nutrition condition of an inpatient is one of the fundamental points in determining his/her prognosis. Therefore, it is important to understand actual meal intake conditions, but it has proven difficult to actually define each patients maximum nutritional food requirements. Until recently, nutrition surveys relied on recording methods that are not very practical. In this study, the author investigated the effectiveness of combining a recording method with photographs of patient's meals. Through photography, it was easier to calculate the quantity of food served, and it was even possible to use photographs for nutritional calculations. This method could be more helpful in more accurately calculating a patient's actual food intake.
