The bacterial population of a commercial freeze-dried mixed-strain starter concentrate for bulk-set was 55 % Lactococcus lactis ssp. cremoris and 42 % Lactococcus lactis ssp. lactis biovar. diacetylactis, and 3 % unknown species. No strains of Lactococcus lactis ssp. lactis and Leuconostoc mesenteroides ssp. cremoris were detected. About 44 % of L. lactis ssp. cremoris isolates were sensitive to two indigenous and three outside phages, and about 67 % of L. lactis ssp. lactis biovar. diacetylactis isolates to one indigenous and one outside phages. Plasmid analyses indicated 15 groups of L. lactis ssp. cremoris strains and seven groups of L. lactis ssp. lactis biovar. diacetylactis. The bacterial population of the first subculture prepared from the starter concentrate was very similar to that of the starter concentrate. About 26 % of L. lactis ssp. cremoris isolates were sensitive to two indigenous and four outside phages, and about 63 % of L. lactis ssp. lactis biovar. diacetylactis isolates to two indigenous and one outside phages. Plasmid analyses showed that marked change in the main bacterial composition was not observed after subculture of the starter concentrate. Although the number of fast acid-producing strains was limited, the subculture functioned as a fast acid-producing starter.
