The effects of pepsin and pancreatin on the saccharifying power of diastase were studied by adding these enzymes to diastase. It was found that pancreatin decreased the saccharifying power of diastase. It may be because pancreatin will inactivate diastase by dissimilating the protein part of diastase molecule. On the other hand, pepsin is considered to be a reasonable combination because it does not affect the saccharifying power of diastase when diastase acts and the proteolytic activity of pepsin can be expected after an optimum pH has been obtained with gastric acid.
