In the study of quantitive determination of 3,4-Benzpyrene in smoked food, investigations were made on the separation of the 3,4-Benzpyrene from fat and oil by the use of dimethylsulfoxide and on the elimination of interfering substances by almina column chromatography. Dimethylsulfoxide dissolves 3,4-Benzpyrene specifically and scarcely dissolves fat and oil. It was confirmed by the experiments with fish oil and animal oil. In the determination of 3,4-Benzpyrene in smoked food which is rich in fat, elimination of the interfering substances was made satisfactorily by almina column chromatography employing anhydrous almina in place of almina. As to the method for determination of 3,4-Benzpyrene, ultraviolet spectrophotometry were investigated by comparing the amount of withdrawal of 3,4-Benzpyrene in food. As the result, it was found that fluorophotometry is more effective than ultraviolet spectrophotometry for determination of 3,4-Benzpyrene.
