DISTRIBUTION OF MUSCLE CELL ENZYME ACTIVITIES IN SERUM AND THEIR RELATIONSHIP TO THE PHYSICAL PROPERTIES OF MEAT IN LANDRACE PIGS

In order to furnish physio-genetic informations for detecting stress-susceptible pigs in Japanese field conditions, distributions of the activities of creatinine phosphokinase (CPK) and lactate dehydrogenase (LDHt) and isozyme patterns of LDH were investigated in 373 Landrace pigs consisting of 7 genetically separated groups. The experimental pigs were bled for the enzyme assay at the age of 3-5 months. The blood samples were taken from ear vein to avoid contamination of fine tissue particles and tissue fluid. One group of 61 barrows was subjected to the standard growing and fattening test, bled for the enzyme assay at the age of 139.7±10.5 days and slaughtered at 90kg of body weight at the age of 150.8±10.2 days for evaluating carcass characters, water-holding capacity (A), toughness (B) and Hunter's L value of meat. Meat quality was scored objectively by "Meat Character Index" defined as Im=A-A/σA-B-B/σB-C-CσC·Simple correlations among the enzyme activities, the physical properties and Im values were computed and multiple correlations between 10 enzyme items and Im values were also computed to predict meat quality.1. Distributions of resting values of CPK, LDHt and percentage activity of LDH5 isozyme showed nonnormality with significant skewness and kurtosis. The activity values of CPK, LDHt and LDH5 should be subjected logarithmic transformation and percentage of LDH5 to arcsin for further statistical processing.2. It is important to obtain enough knowledge of the distributions of enzyme activities before setting a discriminating level of an enzyme for detecting stress-susceptible animals in the herd concerned because significant group differences were recognized among the activities of CPK, LDHt, LDH5 and percentage of LDH5 at resting time. No sex difference was observed in the enzyme activities.3. A few animals showed extremely high values of enzyme activities over m±2σ of the population in the transformed value and tended to have less favorable values of the physical properties of meat. These individuals were tentatively identified as stress-susceptible ones.4. Significant simple correlation coefficients of |10.271-0.343| were found between water-holding capacity and logCPK, arcsin√LDH2%, arcsin√LDH5% and log (LDH5 activity). Also, between toughness of meat and logCPK, a significant simple correlation coefficient of 0.299 was found. Significant simple correlation coefficients of |0.252-0.312| were recognized detween Im values and logCPK, logLDHt, arcsin√LDH2% and logLDH activity from the heart subunit/LDH activity from the muscle subunit·No practically more useful values of multiple correlation coefficients were found between Im values and 10 transformed enzyme items compared to those of the simple correlations.
