In order to study the relationships between the molecular forms and the molecular organization in water and in organic media, single-chain ammonium amphiphiles containing a peptide group were synthesized. The novel amphiphiles that contain a dipeptide group formed a bilayer structure in water. However, they did not form any aggregate in organic media. On the other hand, the amphiphiles that contain a tripeptide group formed a bilayer structure not only in water but also in nonpolar organic solvents whose dielectric constants were in the range of 2.0 to 2.3. Therefore, interpeptide hydrogen bonding is crucial in this case. In the organic solvents, the hydrophobic chain and hydrophilic group act as the solvophilic and solvophobic part, respectively. They assembled the molecules into an aggregate. Interpeptide hydrogen bonding stabilizes the aggregate structure.
