Five diets including 60% brown fish meal (60-BFM), 45% BFM plus 20% Candida utilis or Rhodotorula glutinis (20-CYP or -RYP) and 30% BFM plus 40% CYP or RYP (40-CYP or -RYP) were given to juvenile red sea bream, Pagrus major. The protein, fat and sugar digestibilities of 60-BFM and 40-CYP were higher than 40-RYP. Especially the sugar digestibility markedly differed among the dietary treatments. On the final 42-day of the feeding trial, weight gain and growth performance of 20-CYP and 40-CYP groups were high or equivalent to 60-BFM group. Otherwise, 20-RYP and 40-RYP groups appeared to have significantly lower growth performance than 60-BFM group. No meaningful differences among the dietary treatments were found in final carcass and hepatopancreatic proximate compositions and digestive organ-somatic indices. Aerobic microbial count significantly fell with an increase in dietary RYP inclusion. These results indicate that dietary availability of CYP is similar to BFM, but RIP is lower than BFM, due to nutrient digestibilities rather than essential amino acid profiles of the yeast proteins. Sugar composed of yeast cell wall, such as glucan, mannan and chitin might surely reduce digestibilities and growth performance of the fish.
