Study on Significance of Food Items Rarely Consumed by College Women.

A food consumption survey was conducted on female university students majoring in food sciences or nutrition in seven areas, Abashiri (Hokkaido), Sendai (Miyagi), Matsudo (Chiba), Okayama (Okayama), Kochi (Kochi), Suita (Osaka) and Fukuoka (Fukuoka), for three consecutive days (five days for Fukuoka) in October and November, 1989. About 380 food items on the average were consumed in each area, and the items consumed only once (single consumption items) were analyzed. There were about 130 such items in each area, accounting for 30% of all the food items consumed in that area. There were in total 877 single consumption items in the areas studied, of which 670 items did not overlap. They were mostly sweets, fishes and vegetables. This is because of a great variety of commercially available, processed confections and also of large numbers of species of fishes and vegetables. Since these single consumption items are widely known and commonly distributed, such consumption is considered to reflect abundance and wide distribution of commercial food products in the contemporary society and not reflecting products unique to the region. The significance of such a variety of single consumption items was discussed in respect of the difficulties encountered in the calculation of their nutrient values.
