Influence of .BETA.-Carotene and Vitamin C on Physiologic and Psychologic Responses to Stress.

We investigated the influence of the dietary factors, vitamin C and β-carotene in green/yellow vegetables, on physiologic and psychologic responses to stress. The present experiment was conducted under the spirit of Helsinki Declaration by cooperation from 17 female volunteers (college students aged 18 to 22). The volunteers were divided into three groups and the experimental period (12 days) was divided into two stages (the first six days and the last six days). Stress comprising calculation of math problems for six consecutive hours/day was applied on the 5th and 6th days respectively. The three groups were provided with the same diet during the first six days (the first stage), but the diet was supplemented with 30mg of β-carotene for Group β, 300mg of ascorbic acid for Group C and placebo of safflower oil for Group P during the last six days (the last stage). The results are as follows.1) In the first stage, the number of subjective symptoms increased with loading of stressors when the calculation task was done. In the last stage, the subjective symptoms increased in Group P similarly, but in Groups β and C, the symptoms reduced, especially in Group β.2) The plasma concentration of β-carotene decreased in the first stage in all the groups. In the last stage, the β-carotene concentration also decreased except in Group βwhose diet was supplemented with β-carotene.3) The plasma concentration and urinary excretion of vitamin C did not change in the first stage when they had 100mg of vitamin C in the diet (calculated value), but in the last stage, both concentrations in Group C notably increased with the intake.4) Urinary noradrenaline and adrenaline excretions increased in the first stage and both concentrations temporarily decreased before loading next stressors in the last stage, but significantly increased with loading of the stressors. Group β showed a remarkable increase compared to other groups.
