Relationship between Energy Intake and Dietary Fiber Intake in Ordinary Diet of Female Students.

A dietary survey was carried out on 27 healthy female students for seven consecutive days, and the relation between the energy (E) and dietary fiber (DF) intakes was investigated. The effect of the ingestion of dietary fiber was examined on 10 female students for four consecutive weeks using Japanese rice crackers containing green layer. In the survey, the students received no crackers in the first week, but ingested three pieces (DF: 0.43g/piece) per day in the second week, six per day in the third week and nine per day in the fourth week.1) The ratio of energy to dietary fiber tended to rise due to the increase in the energy intake in ordinary daily diet.2) The content of available energy in the crackers (10.3g/piece) containing green layer was 408kcal/100g, and dietary fiber content 4.2g/100g in rats.3) The mean energy intake per day in each week ranged from 1, 597kcal/day to 1, 692kcal/day, showing no significant difference. However, the intake of dietary fiber increased significantly from 8.8g/day in the first week to 11.6g/day in the fourth week. Consequently, the ratio of energy to dietary fiber decreased significantly from 181kcal/g in the first week to 146kcal/g in the fourth week.
