To investigate factors which affect the salt taste sensitivity, the recognition threshold of salt taste was examined and habitual alcohol intake, smoking, and use of false teeth were studied in healthy and hypertensive male subjects in Tokyo. The results are as follows.1) The recognition threshold of salt taste was higher in the older group (above 45 years of age) than the younger group (between 20 and 44 years of age) in both healthy and hypertensive subjects.2) In the healthy older group, the recognition threshold of salt taste was higher in the subjects who had been taking more than 30g of alcohol a day than in those who had been taking less than 30g.3) In the younger hypertensive patients, smokers showed a higher recognition threshold of the salt taste than non-smokers.4) No reasonable effect was observed in the recognition threshold of the salt taste in those with or without false teeth.
