Objective evaluation of salty taste is recommended for effective education of saltholic subjects. An improved test paper for the salt taste sensitivity was examined in healthy subjects, inhabitants in Mie Prefecture and inpatients on low salt diet of a hospital. Salt taste sensitivity was significantly lower in inhabitants in Mie Prefecture and patients than healthy subjects. In the patients, the salt taste sensitivity increased after admission to the hospital and therapy for both males and females, suggesting that the diet therapy helped to increase their sensitivity for salt taste. Use of the salt taste sensitivity test is considered effective for evaluation of therapeutic diets.
