In view of the increasing population of the elderly, we investigated the dietary habit and preferences of the elderly living in extended families and obtained the following results.1) Of 96 food items investigated, they indicated preferences for rice, steamed rice cake, onion, tofu-bean curd, wakame-seaweed, strawberries, while they did not care for squid, octopus, liver, whale meat, natto-fermented soybeans, goat's milk, skim milk, cheese, yogurt, ham, sausages, spaghetti, pacific saury, pond smelt, chikuwa-fiish cake, ganmodoki-tofu cake, instant noodles and chard. Of 35 items, their preferences examined by quantification-3 were varied depending on their age and sex.2) Of 65 dishes investigated, they indicated preferences for sashimi-raw fish, fish cooked in soysauce, pickled radish, potatoes cooked with soysauce, vinegar seasoned rice mixed with various vegetables and seafood, etc.; they did not care for pork pot, shumai-Chinese meat balls, sauteed okara-tofuflees with vegetables, mustard or horse radish sauces, curry and rice, stir-fried rice, sandwich, etc. The differences according to age and sex were also evident.3) The intake of food groups was analyzed according to PCA, and was found to consist of three components: (1) magnitude of preference, (2) preference for protein or non-protein foods, and (3) preference for legumes and legume products, grains and eggs.In the case of preference for dishes, the first component was the magnitude for preference, and the second component preference for everyday Japanese style dishes and that for Western style dishes.4) The staple food intake pattern showed inter-sex differences. There were more males who had rice for all three meals, the difference being statistically significant. As for the preferences for seasonings, there were differences according to sex, but not age. Significantly more number of women preferred "sour" taste than men.
