Effects of dietary eggs on tissue iron and copper levels and hepatic metalloenzyme activity in iron-deficient rats.

In order to examine the effects of dietary eggs on iron-deficiency, comparison with those of dietary casein on iron-deficiency was made. Weanling Wister-strain male rats were fed normal diet, iron-deficient diet and iron-deficient diet with 5% egg powder for 32 days.The hemoglobin values of rats on egg diet were higher than those of rats on iron-deficient diet. The organ weights of the rats on egg diet were the same as those of the control rats. Hepatic xanthine oxidase activities of the rats on egg diet were lower, and their urate oxidase activities and hepatic copper contents were also lower than those of rats on iron-deficient diet.
