Currently phosphates are added to a wide variety of processed foods such as meat, cheese, salad dressings, carbonated beverage and frozen bakery products. Depending on individual dietary pattern, such additives may increase the intake of phosphorus. This experiment was conducted to assess the physiological effect of excess dietary phosphorus on the balance of calcium, magnesium and phosphorus using male Wistar rats weighing 110g initially and fed two levels of dietary phosphorus concentration, the normal level (0.5%) and the excess level (1.5%)Body weight gain and food intake were depressed in the excess phosphorus diet compared to the normal phosphorus diet. Urinary excretion of calcium and phosphorus was elevated to an extreme degree in the excess phosphorus diet fed group. Increased dietary phosphorus level was accompanied with higher renal concentration of calcium and phosphorus, and decreased calcium and magnesium concentrations in serum. These results suggest that a functional disorder of kidney may have been induced by excess phosphorus diet.
