Effect of well-milled rice, brown rice and enriched rice diets on serum tocopherol and lipid peroxide levels in rats.

Effects of well-milled rice, brown rice and vitamin and mineral enriched rice diets on serum tocopherol and lipid peroxide levels were compared in rats. The aim of the enriched rice is to supplement several vitamins including tocopherol, calcium and iron which are known to be partly lost by the milling of brown rice. The enriched rice is to be used mixed with well-milled rice by a ratio of 1:200 on the weight basis. The mixture contains almost the same amount of α-tocopherol as that in brown rice. Main results obtained in two experiments were as follows: Serum tocopherol level in the group fed with the enriched rice diet was significantly (p<0.05) higher than that in the group fed with well-milled rice diet. Serum lipid peroxide level in the group fed with the enriched rice diet was lower than that in the group fed with well-milled rice diet but the difference was not statistically significant (0.05<p<0.10). No significant difference in the levels of lipid peroxide in the liver and adipose tissue was observed among these three groups.
