1. Preliminary experiments were carried out using enzymes obtained from yeasts, bacteria and molds, in order to search for the source of an enzyme which had the highest hydrolyzing activity of AsA-esters (AsA-Pal1=6-O-Palmitoyl Ascorbic Acid, AsA-Pal2=2, 6-O-Dipalmitoyl Ascorbic Acid). Candida cylindracea, a kind of yeast, exhibited the strongest AsA-ester hydrolyzing activity.2. Lipase preparation obtained from Candida cylindracea could hydrolyze both AsA-Pal1 and AsA-Pal2.When Na-taurocholate was used as the detergent, the ratio of hydrolysis was 98.0% and 45.1%, respectively. When lecithin was used as the detergent, the ratio of hydrolysis was about 99.0% and 82.0% respectively.3. Purified lipase obtained from Candida cylindracea hydrolyzed AsA-Pal2. When Na-taurocholate was used as the detergent, the ratio of hydrolysis was 51.1%.
