A Study of Dietetic Education, Specific for Dietary Cure (Report 1):A Preliminary Survey for Improvement of Dietetic Education of Personnels with Hypertension under Health Control in N City Office

Our survey was performed on 91 persons among the attendants of the Circulatory Disease Lecture for N city office personnels with hypertension, more than 40 years of age, of two groups, "Under Care" and "Under Observation" of the city office health control system. In order to know their understanding of the dietary cure of hypertension and their tendency of taste, we enqueted the following four items, i. e. (1) Are they taking balanced diet? (2) Are they keeping the rule of diminution of main food? (3) Are they abstaining fatty food? (4) Are they observing the limitation of salt? Our results were as follows;(1) As for the understanding of hypertension diet, more than half of them, i. e. 52% were taking unbalanced food, 24% did not diminish main food. 37% did not abstain fatty food and even 43% did not limit taking of salt. (2) As reasons of their not abiding by these four principles, we found the following ones most powerful; "I do not feel my body impaired by them", "I am too hungry", "I like them", "I take my food in restaurant", "My family like them", "I can not keep dietary rule". From this result, we are able to conclude that their dietary habits before the sickness still continue. (3) Their likings of food. Many of them like "Misoshiru (Soy bean paste soup)" and "Sashimi (Sliced raw fish)". As for proteinous food, we found their inclination to simple taste, such as Sashimi, milk, egg and Tofu (Bean-Curdo).As for milk as a good complemently diet, men like it but not women. The salty Tsukudani (Food boiled down in soy) is not liked by men and women both.
