Relation between "Kizami (Minced Foods) Diet" and Physical Factors in a Special Nursing Home for the Elderly.

The purpose of the present study is to investigate the relation between "kizami (minced foods) diet" and physical factors in a special nursing home for the elderly. Subjects were 94 residents ranging in age from 61 to 98 years in a special nursing home in a suburb of Tokyo. The survey was carried out by personal interviews concerning daily diets, health examination including oral examination, ADL and disease status. The results were as follows.1) "Kizami diet" did not show significant correlation with age, sex and duration of the stay in the nursing home. The "kizami diet" was served to those who were edentulous or had unsatisfactory artificial denture.2) With regard to the past history of chronic diseases, only the history of stroke showed a significant association with "kizami diet".3) As for the activity of daily living (ADL) and "kizami diet", those who needed assistance for walking, dressing, bathing and toileting tended to have "kizami diet" served.4) Using "kizami diet" as a dependent variable, the sex, number of years in residence, ADL score, conditions of the oral cavity, and past history of cerebrovascular diseases as independent variables, and age as covariant, analysis of covariance (ANOCOVA) was performed. ADL score emerged as a significant risk factor for "kizami diet".
