In order to assess salt intake in a village of Toyama Prefecture, the survey on food consumption was carried out among adults aged 30 to 59 years. Urinary sodium excretion in the day of food consumption survey was also determined. Potassium and urea nitrogen concentrations in urine were also measured. After people were directed to reduce salt intake, the dietary consumption of salt was re-examined.The results are as follows:1) According to the survey on food consumption, average daily salt intake was 18.0g. Salt in pickles, boiled foods and miso soup was about 70 percent of the total amount of salt consumed.2) The salt content in the urine pooled for 24 hours was significantly correlated with the intake calculated from the survey on food consumption (r=0.54, p<0.01).3) Systolic and diastolic blood pressure were significantly correlated with Na/K ratio of the urine. The correlation coefficients were 0.76 (p<0.01), and 0.53 (p<0.01) respectively.4) According to the survey on food consumption, average daily protein intake was 74.8g and animal protein ratio to total was 0.46. The intake was significantly correlated with urea nitrogen concentration in urine (r=0.60, p<0.01).5) After direction of salt-reduction, the salt intake from pickles was remarkably reduced with more frequent cooking with fat and protein such as fried foods, salad, etc.
