The effect of mince on frozen storage was studied histologically, using pig liver. The condition used were; <BR>Tissue : pig liver within 6hr after death <BR>Time of mince : 20 sec (A) and 60 sec (B) (Osterizer Mini Blender, 13000 rpm) <BR>Temperature of storage : -25°C <BR>Control : tissue which was cut as block <BR>After mince, the many vacuoles by air contamination during mince were observed in both (A) and (B). The shape of vacuoles was a perfect circle and the size was ununiformity. There were the larger and more vacuoles in (B), so the volume of (B) was about twice of (A). During frozen storage, these vacuoles have been condensed and the volume of mince was redused. The number of nucrei in the constant field were considerably decreased during storage for 30 days and the shrunk nuclei were observed in (C). This seems likely that the atrophy of cell due to dehydration was occured. <BR>In (B), on the other hand, the number of nuclei in the field were increased during storage for 30 days. This might be due to the increase of density of mince accompanying the shrinkage of vacuole. <BR>In the case of (A), which is a heterogeneous mince compared with (B), only a slight difference in number of nuclei was seen between before and after freezing. <BR>Before freezing, many shrunk nuclei were observed in (A) and thickening of nucleal membrane was in (B). After freezing for 30 days, the normal shape of nuclei was about 45% in (C), about 18% in (A) and about 15% in (B). In both control and minces, many icecrystalliztion in injured nuclei were observed. When the sample was stained with methylgreen-pyronin, the component which was stained with methylgreen was observed even after 30 days storage in all samples.It magnifies the market of frozen foods, under prepelling the policy of modernistic and rationalize of industry and distribution, after 1960's in Japan.<BR>However. the market structure of frozen foods is <BR>(1) especially about 70 per cent is made up of frozen prepared foodstuffs, <BR>(2) 10 enormous manufacturer form 80 per cent up of market of frozen foods, <BR>(3) but, the direction of frozen foods, the price keep a rising curve up after 1970's.
