Racemiase can be extracted by water with a potential yield of 10_??_12%, when dried cells of L. plantarum are ground with fine silver sand. The racemiase solution can be dried up in a desiccator under reduced pressure, without any loss of its activity. No action of lacticodehydrogenase was ever revealed in the racemiase preparations thus obtained, while the dehydrogenase was found perfectly in the ground cells from which racemiase has been removed, because of a strong cell-binding property of the dehydrogenase. The conclusion mentioned in the previous paper, that “the reason why L. plantarum in which only D-type of lacticodehydrogenase exists, can again dehydrogenate L-lactic acid, is attributed to the action of the D-enzyme co-perated by racemiase” has bean confirmed in the present paper. No reliable evidence was obtained for the pyruvic acid hypothesis on which racemiase was considered as a mixture of D- and L-lacticodehydrogenases, and it dehydrogenated D- and L-lactic acids into pyruvic acid. It may be most probable to consider that lactic acid hydrate is reversibly dehydrated to enol-lactic acid by the action of racemiase as shown in Scheme 5.
