Molecular Species Compositions of Intramuscular Triacylglycerols of Porcine Muscles

The compositions of fatty acid and molecular sgecies in intramuscular triacylglycerols of three kinds of porcine muscles from three way crossing (Landrace×Large White×Duroc) pigs were determined by gas chromatography. There were no differences in the fatty acid and molecular species compositions of triacylglycerols among three kinds of muscles. The major fatty acids of intramuscular triacylglycerols were palmitic acid (C16:0), stearic acid (C8:0) and oleic acid (C18:1) where C18:1 had the highest concentration. The major molecular species of intramuscular triacylglycerols were dipalmitoyl (PP)-oleoyl (O)-glycerol (PPO) and P-stearoyl (S)-O-glycerol (PSO), POO and P-O-linoleoyl (L)-glycerol (POL). POO had the highest concentration in these molecular species.
