Lipase was very sensitive to such irradiation as ionizing radiation, sun light, and artificial light. Seventy per cent of its activity was inactivated by gamma-radiation of 66×10, 000 r.It was demonstrated by Frankel and Tarassuk's method (using trybutyrin as substrate) that milk lipase had nearly the same heat resistance as phosphatase.Determination was carried out with Warburg's manometer by using a method in which Ball's and Beiler and Martin's methods had been combined. As a result, milk xanthine-oxydase was found to have a great radiation-resistance next to that of phosphatase and a great heat-resistance next to that of milk peroxydase.It may be the main reason why Xanthine-oxydase was more radiation-resistant than peroxydase, although it belonged to the group of oxydation-reduction enzymes. It had a large radiation-resistance next to that of phosphatase. It may be attributable to these facts that milk xanthine-oxydase was absorbed to the surface of fat globules in the milk.
