Studies were made on the proteolytic action of 258 strains of lactic acid bacteria and 12 strains of other families of bacteria which had been isolated from raw milk in Japan in the previous studies. The proteolytic activity was estimated by colorimetric determination of free tyrosine liberated from proteins by incubation of the bacterial strains in skim milk.The maximum value of free tyrosine content increased by protein decomposition was 4.38mg% for Streptococcus faecalis A-13 and 4.32mg% for Sir. lactis B-5. Many of the strains having remarkable proteolytic action were found among the isolates of Str. lactis, Sir. cremoris, and Str. faecalis, but lactobacilli showed generally weaker proteolysis than streptococci. Of the 12 strains of bacteria other than lactic acid bacteria, several were found to have strong proteolytic action.Several strains of Str. faecalis and Str. lactis, which have both mild acid-producing capacity and strong proteolytic activity, may be utilized as cheese starter.
