研究論文(Thesisses)Application of Sagamihara grown the Asamizo burdock root for modern recipes are introduced. As the background, traditional recipes for the Asamizo burdock root are described. Burdock root has a good flavor, however, it requires a lot of care in cooking. Therefore these recipes for the Asamizo burdock root are less common nowadays. We invented an easy way of cooking and tasty recipes for the Asamizo burdock root. These recipes will contribute not only to increase the intake of dietary fibers but also to put locally produced and consumed in everyday life in Sagamihara area.
