The characteristic of mucilages is that they swell up in water and produce colloidal solutions which are slimy. These substances are widely distributed and may occur in any organ of the plant. The mucilages vary in composition, they appear to be largely, if not wholly, condensation products of various sugars (glucose, galactose, mannose, xylose and arabinose). This paper is a record of observations on the mucilage of Scallion (allium Bakeri). The writers have found that the mucilages have given sugars only e.g. glucose, fructose and pentoses on hydrolysis. The presences of galactose and mannose seems to us to be uncertainly. Farther experiments on the pentoses are being carried out.
