• Abstract : Allergen information on food label is the most important index for those who need to avoid known allergens. However thousands of foods are on the shelves in retailing stores, and food labels are too small to be read clearly, so they tend to slip over the allergens. In order to solve this problem, we have developed the food allergen information retrieval system with which we can find out processed foods with ease which are not containing specific allergens. For putting the system to practical use, it is necessary to update automatically the database of the system. We tried to accomplish this by on-lined coordination with the material databases of the food manufacturers. We firstly defined the XML Schema of the labeling information which contains allergen information for processed food, secondly designed the protocol to communicate the XML formed labeling information between the systems both in the retailing store and the manufacturer. We finally implemented the protocol in the form of the Web applications in Java to the experimental systems, and demonstrated its benefits.
