The antibacterial action to the various bacteria of the anthocyanin descent dye extracted from five kinds of plants was investigated. As a result, some of the anthocyanin dye tested inhibited the growth of bacteria. In particular, the antibacterial spectrum of the anthocyanin descent dye that has been extracted from the grape rind was wide; its effects were also observed in non-indigenous bacteria as well as oral bacteria. As a result of having fractionated an anthocyanin descent dye derived from a grape rind by a column chromatography, antibacterial activity concentrated on the fraction including the procyanidin oligomer. These results suggest that anthocyanin descent dye has antibacterial activity against oral bacteria, foods and oral care products, including the dye that can be used to keep oral cavities clean.
