This paper looks at the types of spoken and written texts that we use to instruct people on how to do things. It explores how the concepts of genre and register which derive from systemic functional linguistics, can help to reveal how things are typically said when we instruct, the wordings that are available for use and how language is typically organized into recognizable stages so as to achieve the purpose of instructing. It is argued that foreign language learners need to understand the influence of context and culture in how these texts are structured and the linguistic resources drawn on to create them in order to become more competent language users.
